To find the last star which is the 121st Star in the game:
1) Unlock Luigi (see other cheats on GamesTracker for information on how to do this)
2) Go through the entire game
3) When you beat Bowser at the end of the game a new galaxy will be unlocked which is the star "Star Festival" at the beginning of Super Mario Galaxy
4) Complete this new galaxy by collecting 100 purple coins to get the 121st star
